Core is our first wild fermented beer. We took a simple wort of barley and wheat and poured it over hundreds of kilos of freshly picked Limelight and Red Windsor apples. We then closed the lid and let time work its magic. Over the next few months the wild yeast on the skins of the apples slowly fermented the wort into beer. As time progressed the apples broke down into the beer, adding their cidery goodness to the funky flavours already developing.
The beer in these bottles is a completely wild and natural product that will change over time. Expect varying levels of funk and sourness.
